Their father Gustavo is still involved as anadvisor, giving them the benefit of his experience. The farm is split into twenty-eight tablons, allowingthem to produce microlots if they wish. Each isbetween 3 and 6 hectares. In 2012/2013 they lost 80%of their coffee plantations to leaf rust, and the renewalhas changed their way of management. Instead ofpruning some of the trees, they are systematicallypruning the whole parcel of land. Planting one varietalof coffee on each section of land helps with bettermanagement. This strategy has further evolved to startencompassing select varietals at their best performingaltitudes and will form the planting structure over thenext few years.SAN ERNESTOEl SalvadorSan ErnestoFarmUrrutia familyOwnerEl Balsamo, QuetzaltepeqRegion140 hectaresSizeAll the Urrutias Estate coffees are 100% shadegrown and native trees are planted every year toprevent erosion.
